Thomas Keller’s Vegas restaurant Bouchon opened at the Venetian more than 20 years ago, helping sound the firing gun for serious chefs from around the world to set up shop in this city. This is a classic multi-use brasserie in the style of countless places in Paris, or perhaps closer to home somewhere like Balthazar in New York or Cafe Campagné in Seattle. You can go for dinner and get perfect steak frites, poulet roti, and gnocchi a la Parisien—and raid the restaurant’s outstanding wine list—but my favorite time here is weekend brunch, where you can order a basket of Bouchon’s outstanding house baked pastries, sip coffee, and contemplate something from the raw bar (or perhaps a croque madame).
